Parmesan Cheese
Making authentic Parmesan Cheese is quite time consuming and labor intensive. It’s made with a
blend of full cream milk and skim milk with no artificial flavorings or additives, the only ingredient that
may be added is salt. Parmesan is then left to age for 12 months in wheels that weigh up to 88
pounds. At the end, just like on gold ingots, a stamp on each wheel provides the production date
and ID number. Its complex, sharp, nutty flavor with a somewhat grainy texture makes it the king of
hard cheeses: cut it into chunks and drizzled with thick balsamic vinegar for a special treat. How
